When you're craving something sweet but want something lighter than classic chocolate cookies, these lemon cookies are exactly what you need. They're soft on the inside with a slight crispness on the outside, and get their wonderful fresh flavor from lemon juice and zest.

Place the butter and sugar in a bowl and mix until you get a light, creamy mixture.
Add the egg, vanilla extract, lemon zest, and lemon juice, and mix thoroughly.
Add the flour, baking powder, and salt, mixing just until a smooth, soft dough forms.
Cover the bowl and transfer the dough to the refrigerator for about half an hour to make it easier to work with.
Form small balls from the dough and roll each ball generously in powdered sugar.
Arrange the cookies on a baking sheet lined with parchment paper, leaving space between them.
Bake in an oven preheated to 175 degrees Celsius (350°F) for 10-12 minutes. Remove when the cookies are still slightly soft in the center and let them cool and set.
